Day 12 of 40 - My First Signature Recipe Share!

I have a confession. I ate a donut. *sigh* In my defense, we were celebrating Economic Support Specialist Week and my boss's boss brought in donuts and some fruit. I ate the fruit too! I'm so weak! Oh well, I'll drink my coffee and move on with the rest of the day. Nothing hurt and the best thing about THM is that you can get right back on track just three hours later with your next meal. In the grand scheme of things, it didn't hurt anything, but I really am working on my Friday willpower!

Whew! I feel so much better. Thanks for letting me get that off of my chest!

So...


To make this Friday even better, Mother Nature decided to take a break in her long term temper tantrum and give us a break from the 30-40mph winds today. WOOHOO!! I didn't feel like the kids walking into the school might blow away at any minute when I dropped Emmy Lou off this morning.

Speaking of Emmy Lou. My poor big kid is the most accident ridden child! She's worn more braces and casts in her short 8 1/2 years. *sigh* Well, she's earned herself another one AND a follow up visit with the opthomologist. Don't worry, they are non-related issues, but we got both checked out last night at the walk-in clinic.



First, she started our evening by tripping over another kid and falling funny on her wrist. X-rays show no obvious break, but a "suspicious looking growth plate" which I swear is the same comment we got when she actually broke her finger. He said that if she still has pain after a week to have her re-scanned. I think she'll be fine by Monday when she wants to return to karate. Turd!!


As for the (left) eye, she has a blocked duct some sort that he gave me some literature on. If it doesn't drain, we have to take her in and have them sedate her and get rid of it. Fun times around here I tell ya!

Before I took her over to the walk in, we hustled from karate to the school to drop Abbycakes off for her final twirling practice before the show at 6:30, then we all got to stay and watch. They all did awesome. I love that she is willing to perform in front of an audience now!




Each kid even got to do a tiny solo to show off their "trick" and Abbycakes managed to catch her thrown baton! I love that they offer this for all ages at the school. I don't think she wants to focus on just twirling, but she loves learning new stuff!

Needless to say, this mama is so ready for a relaxing, chill weekend! Bags are packed and ready to be loaded after work. I just have to pick up dogs and kids, then we're off to see The Nana (and Papa too, of course)!

Here's a little fun fact for ya...

Sunday marks 12 weeks until the Bay Days Triathlon! Twelve weeks to train my butt off. I've been focusing on training for this 10K next weekend, but my focus will shift a bit after the race. Instead of trying to get out for a run three days a week, I'll be shifting over to at least one bike and swim and then one or two runs. OY! Karate will still be in there and I'm waiting, not so patiently, for the girls' softball assignments so I know what days practices and games will be also. I'll just have to be patient and go with the flow.

So, if anyone out there is wondering... Our weekend menu is still under construction. My mom and I are going to brainstorm together tonight about tomorrow, but tonight I'll be having the final leftover Chipotle Chicken that The Hubby cooked up this week as a rice bowl like you'd get from the restaurant.

Mama's Homemade Chipotle Chicken Bowl

1 batch of Easy All Purpose Chipotle Chicken 
3-4 cups of Brown Rice
Bag of greens
Shredded mozzarella (optional)
Salsa (optional)

Make up a bath of All Purpose Chipotle Chicken. Cube chicken. The recipe states this makes four servings, but I believe we separated them up into 6-8 snack bags filled equally for salad purposes. The Hubby will make up regular brown rice, but I have also used the Boil-in-a-Bag often and like it just as much. We made enough to have a 1/2 cup serving of rice to go with each serving of chicken. These were all set into individual servings so we could grab them for lunch or a solo dinner.

I wanted to keep it an E meal, so I topped it with just a sprinkle of shredded mozzarella cheese (if you're on THM, keep this VERY light as the fat in the cheese will push you into a crossover). You can also add salsa and keep it an E meal.

If you want to make this meal an S meal, you  can add more cheese and sour cream to your chicken bowl, but back off on the rice and substitute with more chopped greens to make it into a chicken salad with all of the yummy fat-filled toppings you enjoy. This chicken recipe is totally universal!

I'll be adding chopped greens to my chicken bowl tonight to make sure I get some veggies and more filler. Basically, if you've ever had one of the burrito or salad bowls from Chipotle, you can recreate it at home with this chicken recipe. The marinade smelled kind of bland when he whipped it up, but the end product was absolutely scrumptious and tasted just like the chicken we get at Chipotle!!

There you have it ladies and gentlemen... my very first signature recipe that I've shared! WOOHOO!! I feel like a true food blogger now! HA! It was perfect as a salad topper for lunches at work, as an ingredient in the chicken bowl or just all by itself!

Oh, I almost forgot again! I need two more "What I Love About Me" things for today's post since it's Friday. Hmmmm.... I love my belly. I know... you're all thinking "She what?!?!" This is probably one of the biggest complained about areas for all women. Hear me out!

I have a love/hate relationship with my belly! Overall, I love my belly! Like I mentioned before, I love my long torso. I do love that even though I don't have six pack abs, I have a relatively flat stomach. I have a mom pouch and you know what... I'm fine with that! I wonder if as I shrink if my belly will ever truly tone up. Some people just don't. I'm okay with that. This belly stretched and stretched until I thought it was going to burst as I carried my two beautiful babies through two very difficult and scary pregnancies and into this world completely healthy and absolutely perfect. It's been punished by my poor eating habits and lack of activity. It's been stretched to uncomfortable points when NOT pregnant. It has always rebounded. It may never be tight, shiny and super slim with definition like some 20-year-old non-mom runner on the front of a magazine. It may always be loose skin or I may never eliminate my pooch... but that's me.

My belly shows my battle and my success. It's the first thing to bloat when I've eaten off plan too long, but also the first thing to shrink as a reward of good behavior. It's been through so much abuse in 36 1/2 years and I'm impressed that it's no worse for wear. I love my belly!

I also love my drive. I always have a flame burning inside driving me to do the things that I need and want to do. No matter what, I never let that flame go out. I have drive. I may not always be on track and my willpower may suck from time to time, but it's my drive that helps me pick up, dust off and move forward because I WANT to, not because I HAVE to. It's what helps me navigate through the detours in life and still find the right path to keep heading toward where I need to be. It comes from being a child who had super supportive parents who helped pick me up and dust me off, who wouldn't let me quit just because I was frustrated, and who showed me that hard work is what gets you where you need to be. My drive was instilled in me as a tiny kid and it's still going strong. I hope I can help fuel my kids' flames in the same way!

Alright then... back at it! I'm training a new employee this week, which has really helped my day go quickly. Plus I love hearing people's stories and we've had a good time B.S.'ing. Now I'm off to get some of my other work done and pray that the afternoon goes as fast as this morning did!
