"E"xhaustion Answers!


It's BACK!!! I laugh at this GIF because as I grabbed a banana on my way out the door this morning I kept saying banana like a Minion. My girls were giggling so hard as we headed off to school. I love that sound. It was the perfect way to start my Friday for sure!

So, in an effort to avoid actually doing my homework this past week, I've found a few new THM blogs as I browsed Pinterest. I know, I'm ridiculous. I'm a horrible procrastinator. When Emmy Lou got caught putting off the homework she missed while we were on vacation, I really tried not to get too upset. She come by it honestly. She had all of spring break to get it done, yet she had to spend hours working on assignments the last three days. OOPS! I'd like to say it was a good lesson learned, but she does have some of my DNA in her and I have yet to learn! Poor kid!

Anyway, back to my Pinterest obsessing... I found a few blogs that helped the little lightbulb above my head light up. *DING* I finally realized why I've been feeling so run down this week. While I've been doing a pretty good job of staying on track with my food and keeping my carbs down, I may have been doing too good of a job. While enjoying a lot of S meals and snacks and a few FP snacks (low carb and low fat), I was lacking one other, important type of fuel source in my daily meal plan.

"E" MEALS!!!

Otherwise known as Energizing meals. DUH! I can't believe it took me that long to figure it out. I guess I was kind of blaming it on sugar detox because I tend to get really sluggish while detoxing. I should be well past the detoxing stage though, so this makes perfect sense. Without those good, healthy, energizing carbs my body is struggling to stay alert all day.

It's a simple solution though! Now that I've detoxed from sugar and my cravings are controlled again, it's time to branch out a bit more. I've been adding yummy fruits to my lunch with my grilled chicken breast. I'll also be adding quinoa back into more meals. I've even decided to finally give overnight oatmeal a try. I'm nervous because I've always been sensitive to textures. Lately that sensitivity has been insane and I'm not sure why. I like to try new things and I enjoy a variety, so it's not me psyching myself out. It sneaks up on me. I'll try something and without a thought I'll suddenly just have a massive aversion and have to stop eating it. The worst part is I'm struggling with scrambled eggs lately. So weird!!! Guess I'll have to go with fried over easy for a while and see if that works! What can I say? I'm an odd duck!

So, E meals it is! Tonight I'll finally get my stuffed sweet potato skins (recipe here). We're in the early stages of a kitchen remodel and The Hubby and my dad had a mess going, so lengthy prepping and baking on Wednesday was out of the question. Yay for salads and protein shakes! (For the adults anyway... the kids got pizza.) I'll let you all know what I think of the recipe. 

The rest of the weekend... eating light and simple because we'll be on the go and I have my monthly check in with the specialist on Tuesday. EEEK! Wish me luck!
